Easter Dinner

Mom and I made an Easter Rice pie Saturday! This pie is traditionally made at Easter and my Italian Nonna made it every single year. Mom says hers is still the best and always will be but we do have her recipe and we now make it every single year too!


It's really a very simple dessert to make and it's so easy! We thought we'd share the recipe with you!

Easter Rice Pie

1 pound ricotta
3/4 cup sugar
4 eggs
1 cup milk
1 cup cooked rice (We used Minute rice this time but most of the time we use Uncle Ben's brand) 1 teaspoon vanilla

Mix all the above ingredients together pretty much in the order they're listed. We shook a couple of shakes of cinnamon into the mixture too and we also added about 1/4 teaspoon of rum extract. We also added a couple of shavings of orange peel. You can also add shavings of chocolate if you'd like too but then the furchildren can't have any!

Pour this liquidy mixture in a well-greased 8"X8" pan with higher sides or in a 9" pie plate - This pie doesn't require a crust! yahoooooooooo

Bake 350 degrees for about an hour. Poke a knife in the center and make sure it comes out clean! Enjoy!

Sunday morning mom and I were in the kitchen once again and this time we made lazanne! It's our Easter dinner. We also had a piece of our Easter meat pie and salad!

I guess the picture tells the story! I'm a pretty decent cook, huh! Is it time for Rice pie yet, mom?!

  18. Oh YUMMMMMMMMM!!! And Italian food for Easter like we have too!!! Isn't it the BEST? Our servant wasn't born Italian but she learned from our manservant's mom who is an angel now, and always was even when she was here with us. Our servant is going to make that rice pie recipe, thank you thank you and nice hair cut toooooo!!!!

    You have just made the Mommy's day.
    We be Italian too. My Grampa, the Mommy's, came over from Sicily when he was 15. The Mommy says the old receipes she learned as a kid were the best. The Mommy said to tell your Mommy thanks a bunch for the meat and rice pies. She told my Aunt Pam & Uncle Sonny about the meat pie, so it won't be Easter but the next time we have the family over for dinner, the Mommy is going to make both.

    The salad looks yummy too. We eat lots of salad around here.

  30. woofies M and M, OMD, mama wuz shure surprised when her checked da mail today...wuz a box in dar, from u all..she hasnt smileded much since last wednesday, but she smileded today...her loves dat little bear...she will treasure it always and furever...nobody knows it wuz her barkday Saturday, it wuznt a happy barkday, she iz still missing me...i miss her and daddy too, but me iz havin so much fun here, me iz playin wiff everdog, cat n hammie...me loves u all, and will watch over u always..and fank u again sooooo muchies....
