Our Mom and Dad

Mom is still away in Florida so we can post pictures of her and she won't even know it! hehehehe
If she were here, we'd be in deep doodoo!

Awhile back Eduardo posted a beautiful picture of his mom and dad and pretty much tagged us all to post pictures of our hoomans! These pictures were taken at my sissy's wedding in June of last year! My mom and dad hardly ever get dressed up so this picture is a real treat! Mom is even wearing make-up!

Lots of you have been asking us to post the cheesebread recipes so here they are. This one is the darker one that has gluten. It's called Cheese Batter bread~

4 1/4 to 5 1/2 cups sifted unbleached flour
3 Tablespoons sugar
1 Tablespoon salt
2 packages active dry yeast
1 cup milk
1 cup water
2 Tablespoons butter or margarine
1 1/2 cups (6 ounces) sharp cheddar cheese, coarsley shredded
1 egg, at room temperature

Sift and measure 5 1/2 cups flour. In the large bowl of an electric mixer, mix 1 3/4 cups flour, the sugar. salt and yeast. Place milk, water and butter in a small saucepan over moderately low heat and heat until liquids are warm (butter will be entirely melted and temperature should be about 125 degrees F.) Gradually add liquid to dry ingredients and beat 2 minutes on medium speed of the electric mixer, scraping bowl occasionally with a rubber spatula. Add cheese, egg and 3/4 cup flour, or enough to make a thick batter. Beat on high speed for 2 minutes, scraping bowl occasionally. Gradually stir in just enough of the remaining flour to make a stiff batter; batter will leave sides of bowl. Cover with a damp cloth and let rise in a warm place (mom turns the oven light on inside the oven and leaves it on the whole time), until double in bulk, about 50-60 minutes. Heat oven to 375 degrees F. Stir batter down with a spoon and beat vigourously for a half minute. Turn batter into 2 deep, greased, 1-quart casseroles. Bake 40-50 minutes, or until done. Remove from casseroles and cool on wire racks. Makes 2 loaves.

And this is the gluten-free Cheesebread loaf, the light bread of the two~

1 cup brown rice flour
1 cup tapioca flour
1 cup potatoe starch flour
1 Tablespoon xanthan gum
1/2 Tablespoon salt
1 Tablespoon sugar
1 1/4 cups water
1 package dry yeast (about 1 Tablespoon)
2 eggs
1/4 cup olive oil or melted butter
1 teaspoon cider vinegar
Approx 6 ounces of sharp cheddar cheese

Using an electric mixer, combine all ingredients. Dough will resemble a thick batter. Scoop it into and oiled 9X5 inch loaf pan and smooth the top. Spray or brush top of dough with a light coating of olive oil. Loosely cover top of pan with plastic wrap and set aside to rise until dough is even with top of pan, about 1 1/2 hours.
Preheat oven to 375 degrees. Remove plastic wrap and bake break until golden brown for about 58 minutes. Remove bread from pan and set aside to cool.
Note: All of the flours and the xanthan gum can be bought at a health food store.

We miss mom and we know for a fact that she misses us! We can't wait for her to come home!

    The crazy old lady says she has a whole set of interchangable bamboo circular needles. She also says that she has no desire to go on a plane, though will probably have to when Peanut's dad returns from Iraq.

I bet she is an awesome cook! If we lived nearby, my parents would love to pay your Mom to cook some really delicious home made meal and desserts and snacks for us, then my parents don't have to cook after work. My parents aren't good cooks, too.
