Nonna's Easter Meat Pie

Mom and I made Nonna's recipe for Easter meat pie today. Some people call it pizza gain but we never did. We have been making it for years and we're always trying to make ours taste better than Nonna's ( Nonna was mom's Italian grandmother who has since passed) but this will NEVER happen! Nonna's always was and always will be the BEST!

I"m the official taste tester! Mitch is outside helping dad in the workshop and he's missing out!We start with the crust - the worst part! Mom hates making crusts because they never seem to cooperate!
We mixed together 2 cups of flour, 1 1/2 teaspoons of salt and 1 teaspoon of sugar.
We mixed together 1/2 cup of oil and 1/4 cup of milk and poured it over the top of the flour, salt and sugar mixture and stirred it all together and formed a ball. Nonna suggests that you put down a sheet of waxed paper, put your crust ball on top of the waxed paper and then put another sheet of waxed paper over the top and then roll out the crust. This method makes rolling a crust almost bearable!Next is dicing all the meats as tiny as you want them to be:
We used 20 small ham slices, prosciutto and genoa salami. And then we diced up the basket cheese!

In a small bowl beat 7 eggs, 1 pound of ricotta, 1/4 cup of parmesan cheese and salt and pepper to taste.

Don't forget that I can have ricotta mom! It's on this kidney girl's diet, ya know! Now you pour the egg-ricotta mixture over the top of all of the diced meats and basket cheese and gently fold them in together. Pour this into your crust.
You're supposed to have a lattice crust to make the meat pie pretty but dumdum mom used it all on the bottom. OOPS!Bake in a 350 degree oven for about 1 1/2 hours until the top is golden brown. yummmmm
And look what Uncle Phil brought mom and dad~
Munson's Chocolates!
You'll be sharing some of those with us too, right mom?
What do you mean NO? Where is your Easter spirit?!
You all know that Scruffs is happening over at Eric Square Dog's bloggie, right? He and Miss Enid need your votes so please head over and cast your votes! It's lots of fun!

Happy Easter to all of our friends!

Love ya lots,
Maggie and Mitch

  1. That looks yummy, guys. I hope the Easter bunny remembers to leave some chocolate eggs at our house for Mom. She loves chocolate, but she never shares. We don't even bother to beg anymore.

Oh, and my mom wants to know what basket cheese is. I told her that it's cheese you puts in a basket but she thinks there might be more to it than that.
