Chewy Peanut Bars

Mom will be away today at a timber frame workshop for Uncle Steve. His barn raising isn't until mid-September but he has a lot of work to do between now and then to make his raising happen so there will be lots of timberframers at Uncle Stevie's house this weekend helping him to prepare!
Mom wanted to bring a dessert to share and naturally, we are more than happy to help her out!
We made Chewy Peanut Bars!

First you preheat your oven to 325 degrees.
In a large saucepan, over low heat melt 1/4 cup of margarine or butter.

Mitch LOVES butter and I think he's NUTS! Does anybody else thinks it's that tasty?Remove the saucepan from the heat and add 1 cup of peanut butter, one 14-ounce can of sweetened condensed milk, 1 teaspoon vanilla extract and 1/4 teaspoon salt.

Mom emptied the peanut butter jar and Mitch got to lick it clean! It's not on my list of acceptable kidney diet foods! BUMMER!Stir in 2 cups of quick-cooking oats (don't cook them- use them just as they come out of the box), 1/2 cup of coarsely chopped peanuts and 1/2 cup of raisins.

I can't have peanuts either. This stinks!Spread this mixture evenly into greased 13" X 9" baking pan. The dough is STICKY just like my glutinous rice is!Now comes the fun part - the licking of the spoon!
We need to be great helpers so mom always asks us to help her out in the kitchen!You bake the Chewy Peanut Bars for 15 minutes, or until they're golden brown.
Cool thoroughly and cut into bars.
Store loosely covered at room temperature.

These won't be stored away - they'll be traveling to Killingworth, which is about 35 minutes from home.
We don't get to go to this workshop. Mom says there will be just too much activity and she needs to work and not babysit for us! What does that mean?!
Our paws are crossed that we get to go to the barn raising, which is more fun anyway!

  5. Great recipe, we think even Alpha can handle that one! Hey, butter, cream, milk, ice cream, yoghurt and especially cheese....we love it!

    You guys are such good help in the kitchen, we usually get "move! or get out", but she loves us cleaning the floor.

  7. I am sorry, Maggie, that you cannot eat peanut butter or nuts, but at least you have a mom who cares enough to keep you healthy! My Daisy can have peanut butter but she doesn't seem to like it but maybe one day her taste buds will change! I hope there's another special treat you were able to munch on while Mitch had all the fun!

  14. OOOOOOOHHHHH - that is a recipe for me - not Paddy though - his pancreatitis leaves him little room for 'fun' food. D might try the recipe out - she is feeling 'productive'.

    Tom brough organic strawberries home from the farmers market last Saturday b/c ours were not ready. Ours are way better!!!!!!!!
