Strawberry Spinach Salad

Mom is at it again making new salad recipes for dinner.  She LOVES spinach so we have another salad to taste-test using spinach and other yummy ingredients!

Strawberry Spinach Salad

1 small bag spinach (about 8-10 cups)
1 cup sliced strawberries
1 cup blueberries
1 small zucchini, thinly sliced
1/4 cup feta cheese
2 Tablespoons raw sunflower seeds- the recipe calls for pumpkin seeds but we used what we had.

Eat your spinach, Molly.  It will make you grow up big and strong like Popeye!

Eat it, Molly.  It's a blueberry.  Mom isn't trying to poison you - honest!

Dressing:

3 Tablespoons frozen orange juice concentrate
2 Tablespoons olive oil
1 Tablespoon white wine vinegar - we didn't have that so we used apple cider vinegar
1 Tablespoon Worcestershire sauce
1 teaspoon poppy seeds
1/2 teaspoon sugar
1/4 teaspoon salt

Mix dressing ingredients in a small bowl and pour over salad ingredients just before serving. 
This was last night's dinner and it was soooooooooo yummy!  Don't the plates look festive!
We'll taste-test any recipe you want to throw at us, mom!

  9. Your salad looks very patriotic as well as yummy! We hope you had a good 4th! It has been raining here since...since, well, I don't remember when it started, but it's been going on for way too long! Most of the 4th of July fireworks were cancelled (for us, that's a GOOD thing). Anyway, I hope you are having better weather than we are!

  21. We just pulled a whole bowl of blueberries off our bush -- this is the perfect recipe for us right now! And perfectly patriotic too. Off to the grocery for the rest of the ingredients!
