Tasty Thursday

 Mom tried out a new recipe.   It's called Authentic White Pizza.

  • 2 1/2 cups all-purpose flour
  • 1 cup warm water (110°F/43°C)
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 tsp sugar
  • ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
  • 1 tbsp olive oil, plus more for brushing
  • 1 cup ricotta cheese
  • 1 ball fresh mozzarella, torn
  • 1/4 cup grated Pecorino Romano
  • 1 clove garlic, minced
  • Fresh basil or thyme leaves
  • Salt, to taste

Instructions

  1. Activate Yeast: Mix water, yeast, and sugar; let sit for 5-10 minutes until foamy.
  2. Make Dough: Mix flour, salt, and yeast mixture; knead until smooth. Let rise for 1-1½ hours.
  3. Preheat and Prepare Toppings: Preheat oven to 425°F (220°C) and prepare ricotta mixture.
  4. Shape Dough: Roll out dough, transfer to baking surface, and brush with olive oil.
  5. Add Toppings: Spread ricotta, add mozzarella and Pecorino, and sprinkle with herbs.
  6. Bake: Bake for 12-15 minutes, garnish with olive oil and arugula if desired, then serve.

  8. Mom doesn't make her own pizza dough.  She buys it already made at our local veggie market.     She made the pizza according to the directions but added sauteed spinach that she wanted to use up.  We didn't use garlic.  We used Mrs Dash's garlic seasoning and the herb seasoning too.  We didn't add salt because Parmesan cheese is salty enough and we baked it for the full 15 minutes.

  10. I thought it was the best thing that I ever tasted but mom doesn't agree.   She prefers the frozen one that our grocery store sells and it's far less work!

    It does seem like a bit of faff for a tasty snack... my mum used to make for us her 'not quite pizza'... she'd knock together a scone mix (four cups flour, pinch of salt, rub in four ounces butter, bring together with just enough water to form a pliable dough) spread it as the base and cover with whatever you fancy for toppings, bake in 180 C (fan)/200 C oven for 15-20 minutes.   3. Mom used to make pizza, a mean deep dish with a light and fluffy olive oil based crust. Now she doesn't eat most of what goes into a pizza so it hasn't been made for several years but we loved the crusts she would give us when she used to make it. Enjoy!

  4. Humans don't understand there is no bad pizza to us :-)

    I may get some pizza bones this weekend - my mom is thinking of ordering one Saturday night so we'll have it for SUNday meals -

  5. We would eat that pizza in a heart beat! Our Mama picky too...she only eats New Jersey pizza. Luckily, our Daddy will eat ANY pizza...and gives us the pizza bones!

  8. your pizza looks wonderful to me, I'll have a big slice! and yours doesn't have all the preservatives a more convenient one would have... I will eat pizza cold, leftover, however. LeeAnna
    Alfie: you're lucky dude, I love eating when I don't have to fight off 20 dogs for my portion and cheese is always good to me...
