Wheelie Wednesday - Pineapple Nut Bread

Hi everyone!  It's me, Autumn!
Mom and I set out to make a pineapple nut bread for the barn raising this weekend.  I guess we should let you all know that it was a total disaster!
The ingredients were 2 eggs, 1/2 cup melted butter (real butter, not the cheap stuff), 1 cup of sugar, 1 teaspoon of vanilla extract, 2 cups of flour, 3 teaspoons of baking powder (yes, we know it sounds like a lot but it doesn't taste like it was too much), 1/2 teaspoon of baking soda, a pinch of salt, 1/2 cup of chopped walnuts and we used 1 cup of diced fresh pineapple. The recipe called for you to use 1 cup of crushed pineapple with the juice so mom added a wee bit of orange juice because our fresh pineapple wasn't very juicy.  We put the batter in a 9" X 5" prepared pan and into the 350 degree oven it went.
It wasn't too much longer and we started to smell something burning. 

Mom didn't think to take a picture of the oozing quick bread and her smoking oven but you get the picture!  Thank goodness it was a cool day with a glorious breeze to blow the burning smell out of our house!

The quick bread was only half done at this point. It still had another 35 minutes to go before it was baked!  UGH!
Mom turned off the oven and cleaned the spills up off the floor of the oven, cleaned off the bread pan and this time we put it back in the oven on a cookie sheet into the pre-heated oven taking into consideration that the batter may have cooled down some at this point.    Our toothpick came out clean after 35 minutes. 
We took the quick break out of the oven, let it cool for a bit and then dumped it out of the pan.
Holy crap!  How are we going to take this to the barn raising and place it next to Aunt April's Martha- Stewart-looking desserts?
The more we cut into it, the more it crumbled!

Mom says it's a disgrace and we can't do anything with it but feed it to the dogs!

Maggie and Mitch sure don't look too unhappy with it!

I think Mitch and Maggie give this four thumbs up! And you could always use it as a base for a pudding or something? But we think your way was the right way.

What a shame your Pineapple Nut bread wasn't as successful as you had hoped. It did look delicious. We hope Maggie and Mitch enjoyed it Autumn.

It is so frustrating when you spend time and money baking something and everything goes wrong! You better run to the bakery and grab something.

I was taking a carrot cake to a baby shower once. It was on the seat beside me in the car. I had to stop suddenly and it landed upside down on the floor. I picked it up and the icing was covered in gravel.
That was a bad moment.

LOL Sorry bout the flop but what made me laugh was the remark~thatI have to feed it to the dogs!! I could hear a resounding YES!!!! LOL
My Mom has thingsthat flop here and there too, I think it just what Moms do sometimes.

I wish I had pics of the first pineapple upside down cake I TRIED to make it was horrible and crumbled like crazy!!

I love that shovel/spoon you were using to feed the dogs - that is so cute!

Hi Maggie and Mitch,
Poor Mom!! Well it really was not a total flop!! The dogs liked it, that is very important!!!!!! I think the problem was the dried pineapple. Dried just didn't work...
Try again Sue with the right pineapple!!

Oh, bummer! Glad you at least got some tastes. That happened to Mom once when she was making a coffee cake and it didn't turn out quite right.

My grandma says that you can cut it in slices. Put them back in the oven. Take them out. Let them cool. Put ice cream on them and some sweet sauce too... and enjoy it!

Ohh, don't feel too bad. The recipe itself doesn't sound promising easy in the first place, pineapple and nuts.. BREAD! How will that work? I just hope that you'll get it right if you must attempt it again. Hugs from a baking loser. =P
