Nature Friday

 We are joining Sunny this week for Nature Friday~~

Off we go to find pretty flowers!

The Ferns are making a showing!
The wild Roses are coming into bloom.   The fragrance needs to be stronger to satisfy mom and it will happen~
We are still finding beautiful perennial Bachelors Button in bloom~
We see this wild bush in bloom all the time and mom looked it up and it's in the Cherry family.  
Mom transplanted this red Yarrow four times and FINALLY, it likes the spot where she moved it!  It looks pretty blooming next to the Chives.

Memorial Day

Mom says that Memorial Day is the unofficial start of Summer so she bought watermelon!

Plan A wasn't going to work and luckily, I was kind enough to drop the piece before I ate the rind.
Plan B is much better!
Good to the last piece and I know she has more.   YAY!

Nature Friday

 We are joining Rosy this week for Nature Friday~~

In front of our house, the Rhododendrons are making a beautiful display!

In the garden, the Iris are still blooming away~
Mom bought a Peony this year and planted it in front of the small shed.   It had 3 buds on it but only one made it.   Hopefully, next year, we will have more blossoms.
At Miss Dotty's house, the purple Columbine are blooming~
We looked this one up and it seems that it's some sort of a Viburnum.   Sadly, it doesn't have a scent like some of them do.

Tasty Tuesday

 We have rhubarb growing in our backyard - not a lot but enough that mom decided to make a rhubarb crisp.

Ingredients:   3 cups diced fresh rhubarb, 1/2 cup white sugar, 1 TBSP all purpose flour, 1 TBSP water,    l tsp ground cinnamon, and 1 tsp ground allspice (optional and we had it so we used it)

Topping:   1 cup oats, 1 cup brown sugar, 1/2 cup flour, 1/2 cup butter.

Directions:   Preheat oven to 350 degrees F.  Grease an 8-inch square baking dish.   

Mix together rhubarb, sugar, flour, water, cinnamon and allspice in a large bowl until combined.  Set aside.   

Make topping:   Mix together oats, brown sugar and flour in large bowl and use a paster cutter to incorporate butter into oat mixture until crumbly.   We didn't find that the pastry cutter was helpful so mom used her hands.

Press about half of the oat toppping into the bottom of the prepared baking dish.   Top with rhubarb mixture and then cover with remaining topping.   Bake for about 45 minutes.

And now to taste the Rhubarb Crisp!

We love it!  The rhubarb comes shining through and there is just the right amount of sweetness and spice.   This recipe is a keeper!

Nature Friday

 We are joining Rosy this week for Nature Friday~~

The Azaleas are coming into bloom!

Mom added this catnip to our garden recently and it's coming into bloom too.
We love the perennial Bachelor's Button - all of the colors!
Mom grew the Chives from seed last year and they didn't do much of anything.   They are looking great this year!
We see this flower near Landlord Bob's mailbox every year.   We think it could be a wild Azalea?

Tasty Tuesday

 Mom was checking out FB one morning and one of her friends posted a recipe for Sweet Potato Cornbread and you know how much we love muffins so we changed it up to be a muffin recipe.

Ingredients:  One cup of all purpose flour, one cup of yellow cornmeal, one tablespoon of baking powder, 1/2 teaspoon of salt, 1/4 teaspoon of baking soda, one half cup of cooked and mashed sweet potato, one quarter cup granulated sugar,  one quarter cup of melted butter, one beaten large egg and one cup of milk.

Instructions:   Preheat oven to 400 degrees F and grease your muffin cups.   In a large bowl, whisk together the flour, cornmeal, baking powder, salt and baking soda.   In a separate mixing bowl, mix together the mashed sweet potato, sugar, melted butter and the beaten egg until well combined.    Add the sweet potato mixture to the dry ingredients and mix well.   Slowly pour in the milk, stirring constantly, until a thick batter forms.   Spoon the batter into the prepared muffin cups.   Bake in preheated oven for approximately 30 minutes, or until a toothpick inserted in the center of a muffin comes out clean.  

I did make sure the sweet potato was sweet enough~

I did taste the batter before it hit the muffin pans.

They are more moist and sweeter than regular corn muffins and yes, that is a sock that you see on my foot.   Mom says I've been at it again so no walkies until I heal and stop limping.   She also wonders if I will ever learn!

Nature Friday

Mom has been to the garden centers again and couldn't pass on these beautiful perennials~

Love the Bleeding Heart and she found a pretty pink one!

We love the vibrant color of these perennial Bachelor Buttons!
Our pink Dogwood is in bloom~
The Irises are starting to open!
We watched the Westminster Dog show on TV this week.   The dog on our television is an English Setter.   He actually won the Sporting Group but sadly didn't win Best in Show.
I met my first English Setter when I was just a baby.   This is Shelby and he is only thirteen weeks old in this photo.     
You're not really going to bop me on my head, are you?!

Molly Monday

 On Friday, mom spent time outside cutting the grass and raking and weeding.   When she came back inside and looked out the picture window, she noticed that Mrs Robin's nest was tilted at a funny angle.  She headed back outside with the camera. She was not surprised to see the damaged eggs.   

The morning of the Coronation of King Charles,  she looked outside and saw Mrs Robin sitting at the edge of her destroyed nest and she cried for Mrs  Robin's hurt.  She's still coming back and it makes us feel so sad.  
The Coronation was a fabulous event.  We were up at 4am and saw the entire six hours of it but we feel so horrible for Mrs Robin.    Hopefully, she won't choose that spot again next year.
Congratulations to Mage, the winner of the 149th Kentucky Derby!  What an exciting race it was!

A SuperBusy Saturday

 Today is the coronation of King Charles - a once in a lifetime and not to be missed event.   As you are reading this post, I will be jetting to Westminster Abbey and I'll arrive just in time for all of the fun festivities!  

Today is also the day for the Run for the Roses at Churchill Downs -  another fun event and I'll be there cheering all the horses on at the Kentucky Derby!    

It's going to be a VERY busy day and a SuperFun day!    
Maybe I'll see some of you there!
