Wheelie Wednesday - Baked Macaroni

Hi everyone. It's me, Autumn!
Did you know that our buddy, Oskar is looking for doggie treat recipes or soup recipes or casserole recipes for a cookbook that will be a fundraiser for pets in need

Mom and I made baked macaroni for company this past weekend so that we could snap pictures of the finished product and submit our recipe.   Our names get mentioned in the cookbook and a link to our blog will be posted too!

This is the cheese sauce warming up.
 It goes over pasta~~
 And gets baked in a 350 degree oven for 35 minutes.    It's ready for the oven, mom!
 And this is the end result.  yummmmmm
Everyone who eats this at our house wants the recipe. 
We don't want to give the recipe away.  You'll have to read it in Oskar's cookbook!

The Bestest Helper Ever

I'm helping mom make rice pie!  Rice pie is a traditional Italian dessert served at Easter but our Nonna used to make it all the time and mom wanted to make it seeing as we had company for dindin.

It's the most simple recipe ever.  It doesn't have a crust.  You just stir everything together in a bowl and pour it into a greased pan, bake it and you have the most wonderful dessert!

The first thing you do is place 1 pound of ricotta into a bowl and stir in 3/4 cup of sugar.  Ricotta is on my kidney diet so I get to have some!

 Next you stir in 4 eggs until this mixture is well blended. 

Add just under 1 cup of milk.

Then add 1 cup of rice that has already been cooked.  We use the long-grained rice that takes 20 minutes to cook on top of the stove. 

 Now it's time to spice it up a bit. 
Mom added 1 teaspoon of vanilla extract, 1/4 teaspoon of rum extract, a couple of shakes of cinnamon, a shake of orange peel and a shake of cardamom.

 Mix well and pour into a greased 8" pyrex dish or a 9" pie dish.
Now it's time to taste-test and make sure it's perfect!
Yup, perfect every time. It's impossible to mess up on this dessert.  It just doesn't happen!

Bake in a 350 degree oven for 1 hour or until an inserted knife comes out clean.

Leftovers

Mom and dad got pizza and lots of it because we had company for dindin!
And she said that we had an overabundance of it and she needed to share. 
Our paws are raised high and wavin' at ya, mom!  We'd be only too happy to help you out!


The camera speed is not as fast as our mouths when it comes to pizza! haha

Wheelie Wednesday - The Felted Entrelac Clutch

Mom has finished knitting the entrelac clutch~~
This is before felting it.

The next step is to put it into a zippered pillowcase and toss it in the washing machine. 

Voila!
It's felted!
 We're all set to go shopping!

Lenny

One of our oldest and dearest friends has crossed the bridge  - our pal, Lenny.
 Lenny and I were the same age and his birthday was 2 days after mine so I always called him my twin and hoped that one day we could meet and maybe share our birthdays together.

We did meet - only it was about a month past both of our birthdays. 
 Lenny was a real gentleman and a real charmer.   Mom fell instantly in love with him and so did we.   His mom and dad are the sweetest hoomans ever and our hearts ache for them. 
 This is one of our very favorite pictures of Lenny. 

We will never forget you, Lenny.  You will be a special friend to us always.
Not a birthday will go by when we don't think of you.
God speed, Lenny.

SNOW

Guess what we're getting today?

The beautiful cold white stuff!  And we thought winter was over!
 Mom's Witch Hazel is still in bloom - in the snow!

 We also got a package in the mail today. 
It's from Becky Blue Bonnet, our Scottie friend.  She recently had a birthday  and  a give-away and we just happened to be lucky winners!

Becky sent us money!   We know EXACTLY how we're going to spend our winnings don't we, Mitch! 
 Becky also sent us the most adorable Scottie buttons.   Mom says she's saving these for something very special!
 She also send us a Scottie notepad that mom can use for her grocery lists!
Should we help mom out and get that list started, Mitch?

My 4th Gotcha Day

Hi everybody!  It's me, Mitch and today is my gotcha day!  I've been with my family for 4 years!

Mom and dad suggested a picnic dindin for my special day!
We picked up a HUGE sandwich at our favorite deli and headed to one of our favorite spots ever.  WENTWORTH'S!

Of course~~~ ice cream!  We had our choice of cherry vanilla or butter crunch.    Mom and dad were both very generous. 

This has sure been a fun picnic!
Living with mom and dad and Maggie has been a dream come true for me. 

Thank you again and again and again for rescuing me from that dreaded pet store, dad!  
I sure do love my life!
