Nature Friday

 We are joining Arty this week for Nature Friday~

We found cheerful mini-daffies on our walk! Yay!

Down near the road at the end of our driveway, mom discovered a beautiful crocus!
Our primrose is going to bloom.   Mom loves planting plants and bulbs that were gifts or that she bought at the grocery store and watching to see if they make it through the winter and bloom in the spring.
Mom will be cutting these and bringing them inside so she can bury her nose in the fragrant flowers♥

This is her latest puzzle.   It wasn't the easiest but she had fun with it.

Wonderful Wednesday............Until

 I was having a wonderful time outside~

Until..... I discovered some kind of dark wild animal poo and decided that I really wanted to roll on it.   This is mom's very creative photo of trying to drag me away from the pile before I got my wish ☺

Tasty Tuesday

 Mom loved the nutella muffins so much last week and she decided to look for another nutella recipe.   This time she decided to go for Peanut Butter and Nutella Muffins.

The recipe:

Ingredients
  • 2 cups all-purpose flour
  • 2/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup plain greek yogurt
  • 3/4 cup buttermilk  - - - we used almond milk
  • 2 eggs
  • 1 cup creamy peanut butter
  • 2 teaspoons vanilla extract
  • 12 spoonfuls Nutella
  •  
  •   
  • Instructions
  • Preheat oven to 350 degrees. Spray a muffin pan with nonstick cooking spray, or put in muffin liners.
  • Combine flour, brown sugar, baking powder, baking soda, and salt in a bowl. Stir.
  • Add in yogurt, buttermilk, eggs, peanut butter, and vanilla. Stir until everything is mixed in.
  • Divide thick batter among the 12 muffin spots. They'll be about 2/3 full.
  • Place 1 tablespoon of Nutella on top of each. Use a toothpick to swirl the Nutella around. Make sure you do it all the way to the bottom so there is Nutella throughout.   The batter is thick and we found that a toothpick was too wishy-washy so we used a butter knife to drag the nutella through the batter.
  • Bake in the preheated oven for about 18-20 minutes.  Mom has the large muffin pan and it took 35 minutes for these whopper-sized muffins to bake. 
    We liked these with peanut butter much better than the muffins without.   We also discovered that one muffin is too large for breakfast so we just ate half and had the other half hours later.  
    yummmmmmm~~

Nature Friday

 We are joining Jakey this week for Nature Friday.

Off we go to find signs of spring~

We found Pussy Willows!
And we found a fluffy feather that was stuck.
Mom thinks it's hilarious to see bozo ducky feets perching.  They don't grip the same as a bird ☺
We don't think this is maple syrup so the tree must have a booboo.
Our Lenten Rose doesn't seem to be doing anything exciting this year.    Maybe next year will be better.

Tasty Tuesday

 Mom has seen recipes using Nutella on FB lots of times and they have always looked so yummy to her so she decided that she was going to make Nutella Muffins!

The recipe: 

  • 1/3 cup (5 Tablespoons or 75g) unsalted butter, softened to room temperature
  • 1/2 cup (100g) granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (120ml) milk
  • 1 and 1/2 cups (190g) white whole wheat flour*
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 8 heaping teaspoons Nutella

Cinnamon-Sugar Topping

  • 1/4 cup (50g) granulated sugar
  • 2 teaspoons ground cinnamon
  • 3 Tablespoons (45g) unsalted butter

Instructions

  1. Preheat oven to 425°F (218°C). Spray muffin pan with cooking spray and set aside.
  2. In a large bowl of an electric or stand mixer, cream butter and sugar together on medium speed. Mix in the egg, vanilla extract, and milk. Gently stir in flour, baking powder, cinnamon, nutmeg, and salt. Do not over mix – stir until *just* combined.
  3. Spoon 1 heaping Tablespoon of batter into muffin cavity. Layer with 1 heaping teaspoon Nutella in the center and spoon another heaping Tablespoon of batter on top. If the muffin tins are completely full, that is ok. They will not overflow. Repeat layering batter and Nutella into each muffin tin. I got exactly 8 muffins. Fill the empty muffin tins halfway with water for even baking.
  4. Bake at 425°F (218°C) for 5 minutes. Keeping the muffins in the oven, reduce temperature to 350°F (177°C) and bake for an additional 13-17 minutes until batter is set. Allow muffins to cool for about 5 minutes.
  5. While the muffins are cooling, make the cinnamon-sugar topping. Melt the butter for about 30 seconds in the microwave. Stir and stick back in microwave if not fully melted. In a separate small bowl, stir together the sugar and cinnamon. Dip the top of each muffin into the melted butter and dip into the cinnamon-sugar mixture. Swirl them around in the cinnamon-sugar a bit to make sure you get a thick coating. Set upright on cooling rack.
  6. Muffins stay fresh in an airtight container up to 1 week.

Mom did use her mixer to mix the butter and sugar and the egg and the vanilla extract and the milk together.   But she stirred in the flour and baking power and salt and spices by hand.  She used 1 cup of whole wheat flour and 1/2 cup of unbleached white flour instead of entirely all whole wheat.

Mom decided not to use the cinnamon-sugar topping.  She thought the muffins would be sweet enough without it.  
These muffins were baked in a 350 degree oven for 35 minutes.

That's probably why we don't see a big gooey center.
Don't worry.   I didn't get ANY Nutella in my portion.   
So how do we rate them?  We give them a TEN!  They are absolutely delicious and we will make them again!

Nature Friday

 We are joining the LLB Gang on this Nature Friday.

We have had beautiful spring-like weather this week and mom decided that she just HAD to hit the nursery to see pretty spring flowers~     She saw beautiful orchids in the greenhouse.

But most of what she saw were pansies~
Hundreds of beautiful pansies~
And when there are this many pansies in an enclosed spot, the fragrance is wonderful...........only she had on her necessary mask and she couldn't smell a thing :-(
However do you choose just one or two pots to take home?
There are so many beauties!

 Mom took a ride to the nursery, without me, to see pretty flowers and came home with two pots of viola pansies.

But she didn't forget about poor little me waiting at home and all alone *sniff sniff*.   She stopped at another fun store and bought me a Whimzees pressie!

Nature Friday

 We are joining Rosy today for Nature Friday.

Our snow is gradually melting and there are more interesting stuffs to sniff on walkies.

There aren't any spring greens emerging yet except for in our yard and those flowers seem to be on hold at the moment.  
I can't imagine that the mailman likes driving through this ice to deliver their mail and I bet these peeps aren't too happy to have to skate to their mailbox!

I was snow-bathing on my birthday! It was a wonderfully warm and beautiful day and today, we're back to the deep freeze.    Thank you so much for all of your birthday wishes!  I loved them all♥

My Nineth Birthday

 Today is my birthday! I am nine years old!

 
Mom made a cheeseburger just for me!

I had my very own pawty and fortunately for me, I was the only one who got to eat☺

Mom bought me a lotus ball that she thought that I might have some fun with.

She put a treat inside the velcro "petals", which wasn't the easiest to get out and she said that next time we go out to play, we will have to bring lotus ball out with us.

Marv, Jo Jo, Komo, Cinnamon & Angel Nellie sent me my very own horoscope for my special day~

How cool is this!  Thank you so much!  That was just so sweet of all of you♥
