She found quite a few recipes and sorta created her own from all of the ones that she read.
She sauteed a shallot and a garlic clove together until soft and transparent and then she added a 15-oz box of chicken stock and salt and pepper and a tiny bit of sugar and Mrs Dash's Italian seasoning (which she could never live without) and let the broth simmer till it was good and hot and then she added a 28-oz can of crushed tomatoes and she let that cook for a bit.
And then she added 1-cup of heavy cream. One of the recipes that she read suggested stirring in a teaspoon of the pesto and she thought that was a great idea! It's the perfect color that reminds mom of all of the cold and crisp days that her mom made this for lunch for my mom and her brothers when they came inside from playing outside all morning.
It's perfect, mom!
We'll be making Cream of Tomato soup more than once this season!

I love all of Mrs. Dash's seasonings. Her sodium free taco seasoning is wonderful My spice rack is full. I use the Italian seasoning on everything love the table blend and the Lemon and Pepper is scrumptious on steamed asparagus. What a great recipe

ReplyDeletehmmmmm... as a sattvika vegetarian, most of this is 'no-no': my recipe (should you wish to try it :~>) is - -
1 can of crushed toms plus a dozen cherry toms halved, (or three regular, cut to similar size),
a bunch of parsley finely chopped,
two sage leaves finely chopped,
one bay leaf whole,
1 tablesp smoked paprika and a healthy dash of worcestershire sauce,
two vegetable stock cubes (or like quantity of powdered stock).
Place everything into the pot, bring to boil, then simmer for half an hour. Remove the bay leaf and blitz the rest. Add cream, salt and pepper to taste at time of serving. (Instead of cream, try cottage cheese!)
Either way - we soupies are right for the winter!!! Hugs and wags, YAM-aunty xxx
That looks very yummy indeed! My ghostwriter has been eyeing that big butternut squash that's been sitting in the kitchen, and trying to decide what to make out of it. Soup? Or just baked squash?

Oh, that looks good, but I prefer a clear soup, so might try that and not add the cream! I try to avoid canned soups as well now, so always want easy soup recipes.

ReplyDeleteTomato soup, reminds me of lunches my father used to make us, tomato soup and bacon snacks. Bacon snacks were basically cheese whiz on toast with a bit of bacon that were put under the broiler for a few minutes.
ReplyDeleteYour soup looks so good that Mom and Dad had tomato soup and grilled cheese sandwiches for dinner last night. Mom used canned soup because that's what she grew up with and she likes it plus she's lazy.
ReplyDeleteIt looks very yummy and great for this Autumn weather. Well here in the UK it is just rain, rain, rain! I think Treacle is growing webbed feet!
ReplyDeleteIt was dry yesterday and the squirrel was in the garden and she chased it up the tree and it escaped over the Boys den and into the woods behind us!!!!!
We also make homemade tomato soup and it is a favourite of everyone.
