My mom isn't one for white potatoes as a rule but she was hungry for them and decided she wanted mashed potatoes for dinner one night which meant that she had leftover mashed potatoes. Now what to do with them. She decided that mashed potato cakes might be fun. She's never had them before. She took 2 cups of mashed potatoes and added an egg and some minced garlic and flour and parmesan cheese and some Mrs Dash's Italian seasoning and combined these ingredients in a large bowl.
Then she divided the potato mixture and coated the patties with panko breadcrumbs.
In a large skillet, she put a small amount of oil and cooked the patties about 5 minutes per side until they were browned.
It's time consuming but they're done.

The patties were good but mom didn't think they were tasty enough to make again. She says they were basically glorified mashed potatoes in a patty shape and she spent a half hour washing all the dishes!

Your mashed potato cakes have taken Gail right back to her childhood. Although of course in the typical kitchen in 1960s Britain there was nothing so exotic as garlic and parmesan cheese!

ReplyDeleteAs a mashed potato aficionado, I find it difficult to keep it long enough to do anything else with it, so I and kinda with mum on this one!!! Mind you, my mash is luxurious; some butter, some milk, plenty seasoning, then shredded cheese, maybe some corn or peas or I may have cooked carrots and cauliflower with the tatties - or parsnips - ... you know what I mean??? I cannot do it. At least yours were 87 x's prettier than mine, which were more like potato soup. I'm with mom Molly when it takes longer to clean up than eat...I'm not happy either

ReplyDeleteMy Gram used to make them and I loved them. If we have mashed potatoes left over, which doesn't happen often because I love them, the dogs get them mixed into their dinner.
ReplyDeleteThey are a lot of work and I've only made them once too. If I have lots of left over mashed potatoes I make baked potatoes out of them. Scallions, butter, cheese, sour cream, bacon bits and whatever else you like on your baked potato. It's really good.

I think they look good! Whenever Momma has mashed potatoes, she makes shepherd's pie. (Well, cottage pie technically, since it's ground beef instead of lamb.)

ReplyDeleteMom wishes her Aunt Rose were still around because she made the BEST potato cakes ever. She must have had a secret ingredient. Mom did not like mashed potatoes at all, but she loved the cakes. She now makes mashed potatoes on Sunday for dinner and peels enough so she can keep a container of them before mashing - she uses them to make hash browns during the week, or maybe potato salad. That way she only peels and boils once a week:)

ReplyDeleteA good idea and they do look yummy. If you have mashed potatoes left have you ever made this recipe Bubble & Squeak? Melt butter in a non stick pan and add two rashers of bacon (I cut mine up in bits). As it browns add some sliced onion and a garlic glove (if you like garlic). Then add to the mixture some shredded boiled cabbage and let that colour for a while. Add the mashed potato, about 200g,to the pan and mash together with the other ingredients until it covers the base of the pan. Allow it to catch slightly on the bases before turning it over and let it catch again (this is why it is called bubble and squeak!!!) Cut it into wedges and serve hot.
ReplyDeleteAt least this is only one pan which is used. We, as a family, always used to have this in Winter on a Monday evening after the roast dinner on Sunday when there were leftovers left!!!!
