Nature Friday

We are joining the LLB gang this week for Nature Friday~~

Ever since the Nor'easter hit, we haven't seen much of the sun.  We sure do miss it!

The Asters in our backyard are making quite the showing.  The purple ones~

The pink ones~

Mom was taking a picture of this tree with berries and guess what she saw.   Do you see him?   It's an adorable tiny froggie!

The beautiful sedum is in bloom~

All of our Butterfly Bushes are still blooming away but the butterflies have left Connecticut~

Happy Friday and welcome to October!

Tasty Tuesday

First of all, we are so very thankful that we never lost our electricity during the Nor'easter~

You know how mom loves her recipes that she finds on FB.  Mom has had Apple Cider donuts and they are to die for so she decided to make~

Apple Cider Muffins

• 1 1/2 C all purpose flour
• ▢1/2 C granulated sugar
• ▢1/2 C light brown sugar
• ▢1 tsp baking powder
• ▢1/2 tsp baking soda
• ▢1/4 tsp salt
• ▢3/4 tsp cinnamon
• ▢1/4 tsp nutmeg
• ▢3/4 C apple cider
• ▢1 large egg
• ▢1/2 tsp vanilla extract

• Preheat oven to 350°F. Grease a muffin pan. Set aside.
• In a medium bowl, combine apple cider, egg and vanilla extract.
• In a large bowl or stand mixer combine flour, 1/2 cup granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon and nutmeg. With mixer running on low, slowly incorporate wet ingredients. Mix until batter is just combined and no streaks remain. Using a large cookie scoop, divide batter between prepared muffin cavities.
• Bake for 15-18 minutes or until a toothpick inserted comes out clean.
• The batter is sure yummy~
•

The muffins just out of the oven~

It's almost time for a taste!

I sure do love being official tasteTester~

Notice that this recipe has no butter or oil or shortening.  They are so spicy and delicious.    This recipe is a keeper, mom!

Happy Tuesday!
