Mom went to Miss Jan's house yesterday and came home with a shopping bag that contained dirty veges. She said that she watched Miss Jan dig them out of the ground with her spade.
After lots of scrubbing and changing of the water many times - we have parsnips!Parsnips take mom back to her childhood when her mom used to make them. She simmered them in water until they were fork tender~
Mom sorta forgot about them - oops - so she didn't have to drain them. They she added a couple of pats of butter and browned them on both sides.
I'm ready whenever you are, mom!

Gail loves parsnips of all shapes and size. Mashed are good but roast even better!

Parsnips are yummy! We usually dice them up, mix them with other root vegies, coat them with olive oil, a sprinkle of salt and rosemary, then roast them in the oven.

ReplyDeleteMom's gram used to love root veggies, parsnips, beets,turnips. She was the only one in the family that liked them. Mom has tried them but she's not a fan. Mom did eat a lot of beets when she was in Russia but they're not her favorite.

ReplyDeleteWe adore parsnips and have never had fresh out of the garden. We tried growing them but they got buggy....this is probably more info than you wanted but hey, its our nickel. Anyway we will try them roasted next time....they do look delicious.

ReplyDeleteI never had parsnips as a child, and just tried them for the first time a few years ago. I wasn't really a fan, but the way your Mom cooked them might be better, Molly, so I might just try them again!
