Mom saw someone on facebook post a picture of noodle pudding and it made her drool and she knew that she had to give it a try.
This is the recipe that we used - Grandma Rose's Jewish Noodle Kugel (Luchen Kugel) - This Old Gal - but mom cut it in half and used an 8" x 8" pyrex pan.
And of course, I had to tastetest the ingredients and give them my seal of approval. I do love cottage cheese!
And I do love noodles!We didn't add the corn flakes topping but mom did sprinkle cinnamon before she put it in the oven.
Our kugel took 45 minutes to bake.
In all honesty, we like the kugel the second day much better. Leaving it covered overnight in the frig made the noodles on top not quite so crusty and the kugel tasted more moist and flavorful to us. We give the recipe 8 paws up!

ReplyDeleteI learned about Kugel in the 1970's. We had a lovely Jewish family 2 doors up from us at our first house. (She was the neighbor who took me to the ER when I stabbed my finger with a crochet hook.

She and her family invited us to many of their celebrations. She often served kugel. I have her recipe.

Corn flakes on the top would have made it better the first day, but lots of dishes do taste better the second day of blending their flavors and setting up firmer. I bet that would be good with a protein added.

ReplyDelete...now, to me, noodles are used in oriental recipes... I am thinking this looks like some sort of pasta....(paused and went searching, yes, durum wheat, so pasta). A long few decades back, when I was at school Domestic Science class, I produced a sweet pasta pudding; thin macaroni, boiled then tossed with stewed apples and sultanas, and topped with wholemeal breadcrumbs, then baked for 15 minutes in hot oven, served with creme fraise or plain yoghurt. Everyone thought I was crazy but it was a hit! Hugs and wags, YAM-aunty xxx
