Baking the Christmas Pie

 We have wicked weather here today and we have praying that our electricity stays on.  So far-so good!

Mom decided to make a Christmas Ricotta Pie this year for Christmas Eve dinner.

Mom rarely makes a pie crust from scratch because it's so aggravating getting the crust off the counter once it's rolled out.    Pie crusts were gram's specialty.  They came out perfect every single time.   

One 9-inch pie crust.

Mix together 2 pounds of ricotta, one cup of granulated sugar, four eggs, one tablespoon grated orange peel,  one half cup dried cranberries, one half cup chopped almonds, one half cup chocolate chips, two teaspoons rum extract, one teaspoon vanilla extract and one half teaspoon cinnamon.  

Bake at 350 degrees for approximately one hour and twenty minutes.

The pie is ready to go into the oven but not before I get to lick the spatula!   


It's out of the oven!   Mom will sprinkle it with confectionary sugar after it has cooled.

  1. Ohhhhhhhhhhhhh Molly I'm so happy the power stayed on for the pie to cook. I have never head of a
    Christmas Ricotta Pie. I bet you are sharing it with your human Sissy.
    It is truly a work of art, I love the heart in the center. I 100% understand the pie crust thing. I am so messy with flour. The bought 9" piecrust are okey dokey fine by me.
    We are having some very very very gusty wind. I have a pot of navy bean soup in the crock pot. I'm using bits and pieces of our Honey Baked Ham to flavor it. Fingers crossed it too gets to fully cook

  2. That pie looks super yummy! Your mom did a great job with that crust. Our mom always uses the ones that she can find in the dairy case at the grocery store. BOL!

  4. Wow that pie looks interesting and super yummy Molly. I'm told that my late Human Granny made the best ever pie crusts. Gail tries every now and then but she says hers never quite match up.

  9. My aunt was a great cook. I asked her once how she made such perfect pie crusts. Her answer was "You don't have to reinvent the wheel. Use a premade crust." Now I let Pillsbury make my pies delicious. Enjoy your pie and have a most wonderful Christmas.

  14. Your pie looks just perfect! Our mom can't make a pie crust. She has tried so many times and it is always a disaster, so she has to buy those pie crusts pre-made if she needs one. Enjoy the Christmas pie.
