Making Salads for the Raising

We helped mom make salads for the barn raising!  The first salad we helped make was a four bean salad!  Our gram has been making this one for years so mom decided that this would be a great choice!
You drain 1 can of cut green beans ( mom used 2 because we're having a lot of hoomans), 1 can of cut yellow wax beans, 1 can of red kidney beans and 1 can of garbanzo beans.   Dice 1/2 cup of onion and 2 bell peppers  - and remember to beg for some.
And don't forget the 6 stalks of celery, mom!
Toss this all together.   And then in a small bowl, add 1/2 cup of sugar, 1/2 cup of wine vinegar, 1/3 cup of olive oil and a pinch of salt.  Stir.
Pour this mixture over the beans and put it in the frig to chill and marinate!  yummmmm
The other salad is called Ramen Noodle Cole Slaw Salad.  Mom got the recipe a few years ago from our friend, Miss Donna, who just happens to be Marty the Cairn Terrier's mom. 
In a bowl combine 1 bag of shredded cole slaw cabbage.  Mom found it in the vege aisle in the grocery store in a package and it's all shredded for you!  whoooohoooo
Add 2 ramen beef noodle packets (not the actual beef packets, just the noodle part.  You can find these in the soup aisle).  You break the noodles up into bite-sized pieces. 
Add 1 cup of sunflower seeds
Add 1/2 cup of slivered almonds
The recipe says to add 3-4 chopped scallions but we have chives in our garden so that's what we used.
We also added sesame seeds and poppy seeds because we like them.

Put the bowl in the frig overnight.

This is the dressing recipe that will be poured on top tomorrow and tossed in:
1 cup of oil
1/2 cup white vinegar or you can use cider vinegar and mom will most probably use wine vinegar - so the vinegar is not fussy.
Add those 2 beef packets that were in with the ramen noodles.
Mix  - pour over the top and toss the salad!

Our next project is to make TONS of tuna salad and a chocolate cake! 

We wish we could say that we're attending the barn raising but we're not!  Mom said there will be 70+ hoomans there!

  9. Those recipes sound yummy. We particularly love green beans -- and celery isn't s bad either. Not crazy about the leaves though.

  17. Good luck with the barn raising tomorrow-we can hardly wait to see the pictures!

    Wish we could be there...to eat all that delicious food and see it in person -but I guess we'd kinda have to do some heavy liftin' to earn our keep-huh?

    Here in Mexico, everyone eats beans, and I could say at least once a day but it is not common to eat them cold.
