Wheelie Wednesday - Corn Chowder and Our Sad Good-byes

Hi everybody. It's me, Autumn!
Our weather is turning cooler and that means that mom loves to make soups for dinner.  Our soup choice today is corn chowder!

We started off by putting 2 Tablespoons of butter in our pot along with 3 pieces of bacon that have been cut up.   We also added 1 medium onion and salt and pepper and celery salt and bacon salt. 
We added 2 large potatoes~


And then we added the kernels off of 6 ears of corn and let this mixture cook until it got soft and mushy. 
Then we added about 1 1/2 cups of water and 2 chicken bouillon cubes and we let this cook until the potatoes and corn were done.   Once the potatoes and the corn were cooked thoroughly, we added 1 quart of light cream (this recipe is very rich but VERY yummy).
Shake a couple of shakes of parsley on top and there you have it! 
Let the soup get hot but do not boil.
Serve with oysterette crackers and enjoy!



We are still very sad over the loss of Miss Ellie.  She and Maggie were the same age and, not to play favorites, but she was our favorite Thuglet Dale.  We ache so much for her family.

And yesterday we read that our dear friend Snowball has left us.  Snowball has been Maggie's friend for a very long time, just as Ellie was. 
She was always at the height of fashion!
She was a gorgeous sweet girl!


We are missing you so much, Snowball and we are hoping that you are having fun swimming, which you so loved to do~
And we hope that you are having an ice cream cone and enjoying it~

We will think of you fondly everytime mom carries the beautiful pouch that you and your jiejie made for us~

We will never forget you, Snowball!  You are in our hearts forever and ever.

  3. Your soup sounds very, very yummy! We are sad too. I guess our mom didn't look at FB too much, yesterday, because she missed the news about Snowball. It's really sad that she had to go through so much before she left for the bridge!

  16. Too much sadness, seems like we are losing so many good furiends. We didn't know Miss Ellie or Snowball very well, but our hearts ache for their families.

    Autumn, you sure did share a good recipe - and just the right time of the year to be thinking about hearty and warm soups.

  37. Climate is really getting colder so the corn chowder is totally enticing me! Now, I just have to find the cream.

    So sorry to hear about Ms. Ellie. She is survived by so many other Airedales in the family, so I'm glad she wasn't lonely. My condolences to sweet snowball as well. If I'm not mistaken, 'jiejie' means ' elder sister' in Mandarin.

    I hope they are happy in heaven.
