Mom found this Eggplant Pizza recipe and wanted to try it out for dinner. We love it when we get to help mom in the kitchen and be her tastetesters!
The eggplant has been sliced and we salted it on both sides. We have to wait at least 2 hours before we can continue the preparation.
Molly has never had a black olive before. First she has to make sure that mom isn't trying to poison her and then she likes to play with anything round before she eats it.
These are the breaded eggplant slices browning away.

Stash lemon-ginger tea that's brewing. If you've never had it before and you like tea, mom highly recommends it. Auntie Lydia turned her onto it ☺
Time to tastetest the mozzarella~
We did not use onion on our eggplant pizza. Mom wanted to be able to share a bite with us.

We love it and so do mom and dad. We will be making this recipe again soon!

that does sound good - Mom loves her eggplant lasagna - it is wonderful and deep fried eggplant with ranch dipping is awesome too

ReplyDeleteMmmm looks gooood! Love the suspicious look at the olive - AS IF human food was ever going to poison her. Mojo pulls snooty faces before accepting food too. I think it's just for the sake of maintaining form and not seeming too eager. ;)
