Mom and I were busy in the kitchen this morning. We are making Nonna's Rice Pie for Easter dindin tomorrow~
I am always the official taste tester!
It's perfect, mom - exactly the right amount of ingredients!
If you don't like to make pie crust and you like a simple easy to make pie that works for Easter or any summer day, this is the pie for you.
Mix together:
1 pound ricotta
3/4 cup sugar
4 eggs
Approx 1 cup of whole milk (mom uses a little on the lesser side of a cup)
1 cup cooked and cooled rice
1 teaspoon vanilla, a dash of rum extract and a few shakes of cinnamon.
Stir it all together in a bowl with a spoon. EasyPeasy, right!
Bake in a 350 degree oven for 50 minutes to one hour depending on your oven. Mom has noticed that gas ovens seem to bake faster than electric ones.
The rice pie is ready for tomorrow☺
