Mom decided that she wanted to make lentil soup and she wanted it to have more veges in it than she has put into her lentil soup in the past, which is great with me because I love veges!
She started sauteing the onion and garlic and sausage together and then added the carrots~
Next she added the chicken broth and the lentils and Mrs Dash spices and salt and pepper and got it nice and hot and let it cook for a bit to soften the lentils. Then came the diced tomatoes.
When the soup was almost done - she added the spinach and parmesan cheese and black olives. She puts black olives in almost everything because she loves them and she won't share not even one of them with me!
She really likes this recipe. It's a keeper and she'll be making it again as the weather gets colder.

ReplyDeleteNorma Jean loves veggies, too, including olives. She would enjoy a bowl of soup with your Mom. Yesterday her doctor said to keep her weight up, so she snacks a lot.

Mom is drooling over that soup. She may just have to try to follow what your Mom did and make some too. Lightning and Misty like carrots, but not Timber. He doesn't like the way they feel in his mouth; the same with apples and lettuce. Guess he is more of a meat and potato kind of guy.

ReplyDeleteIt is definitely soup weather right now. Mom loves lentil soup too, but she doesn't like any olives. Her recipe is similar minus the olives and spinach. Enjoy!
