Tasty Tuesday

 A few days ago, mom bought apple cider muffins at our local Northford Store and they were To- Die-For-Delicious so she decided that she was going to search for an apple cider quick bread recipe to make.  She found one that sounded pretty yummy to her~

 Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 2/3 cup granulated white sugar
  • 1/3 cup packed light brown sugar
  • 1/4 cup (1/2 stick) butter, at room temperature
  • 2 large eggs
  • 1/2 cup apple cider
  • cups peeled and chopped apples
  • 1 tablespoon freshly squeezed lemon juice

Instructions
  • Preheat the oven to 350 degrees F. Spray a 8x5-inch loaf pan with nonstick spray.
  • In a medium bowl, sift the dry ingredients (flour through cloves).
  • In a large bowl, use an electric mixer to cream together the sugars and butter. Beat in eggs. Add in flour mixture alternately with cider- about half at a time, and mix just until combined.
  • In a small bowl, toss the apples with lemon juice. Stir into the batter.
  • Scoop the batter into the prepared pan. Bake 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. Let cool for at least 20 minutes, then remove to a wire rack and let cool completely.  Time for a taste test before you scoop it into the loaf pan, mom!
    It tastes good and it's looking good~
    An hour later, it's out of the oven.   It smells soooo yummy!
     
    In all honesty, the apple cider loaf bread was moist and delicious but the apple cider muffins from Northford Store win out~
