Chicken Adobo

Mom made a new recipe for dindin recently. It's called Chicken Adobo!This is the recipe:

  • 1 teaspoon soy sauce
  • 2 teaspoons brown sugar
  • 2 tablespoons white wine vinegar
  • 1 1/2 cup chicken broth
  • 2 tablespoons peanut oil
  • 1 pound skinless, boneless chicken breasts, halved
  • 1 teaspoon minced garlic
  • 1 onion, chopped fine
  • 1 bay leaf
  • 2 tablespoons butter
  • salt, to taste

Combine soy sauce, sugar, vinegar, and broth. Boil until reduced by half.

In large skillet, heat oil and saute chicken pieces until well browned. Remove from pan.

In same skillet, cook garlic, onion, and bay leaf until onion is softened. Add broth, chicken with their juices and simmer, turning the chicken until chicken is cooked through.

Place chicken on plates, stir butter into sauce and cook until slightly thickened. Discard bay leaf, season with salt and pepper and pour over chicken. Serve.

The chicken broth sauce has been made and the chicken has been browned and we're cooking up our onions and garlic mixture. It smells so good!

While the onions were limping, mom made salad. Both of us love lettuce!

Dindin is done only we don't get any of it because mom says there are just too many onions involved but we did to have a tomato wedge and a crouton!

We'll take it! It's better than nothing, right?!

  6. Looks so good! Our peeps used to live in the Philippines and chicken adobo is one of their special dishes. Our sissy was little at the time and she always called it "chicken dumbo".

  8. ooooo.... I imagine the house smells inviting as the onions and garlic saute.....and the dollop of butter at the end finishes the recipe perfectly. Thanks for the recipe, I have everything (except the onion) on hand and plan to make this dish!!!

  9. Tom and I make that dish too with a little less onions so Bambi can share and Happy too. Bambi loves vegies but not lettuce. Bruce loved lettuce. We are all different!!!

  10. I love Chicken Adobo.Had a friend that used to make it for me years ago. She learned to make it while stationed in Hawaii. Always made me blow up from the sodium though it was worth it! Learned to used the lower sodium soy finally...

WHEW were we behind!! geesh but PL2 got two lovely recipes and we saw your fabulous spring flowers.PL2 read the post of how Mags lost weight on her new diet and she was nodding her head cuz PomPom boy has lost weight on his new no grain diet low carb diet. PL2 wants you to email her( we said she use our email ) to let her know about this rice cuz maybe gum boy could have it. I on the other hand have gained weight(hee hee) love and a million kisses A+A

  27. OMD glad you mentioned the warning. Every time I see a recipe I ask my mommy to prepare it for us, but I won't show her this one if I can't have it. I'll just keep repeating it's fun name: Chicken Adobo for din din Ha ha
