Honey Almond Butter Apple Bread

Mom had an over-ripe banana and decided to make a quick bread.   She constantly tries to find recipes that use whole wheat flour with not a lot of sugar.  She says that we need to try to eat as healthy as we can.   Whatever, mom~

The recipe:

Ingredients:
For Bread
  • 1/2 cup apple sauce
  • 1/4 cup brown sugar
  • 1 1/2 cup whole wheat pastry flour
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon nutmeg
  • 1/3 cup sugar
  • 2 teaspoons vanilla
  • 1 large apple, peeled and chopped
  • 1 banana, mashed
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/8 teaspoon cloves

For Topping
Directions:
1. For the bread, mix all of the wet ingredients, apple, and banana together in a large bowl. In a medium bowl, combine dry ingredients and transfer to the large wet ingredient bowl, folding gently. Pour the bread mixture into a greased loaf pan.
2. In a small bowl, mix all of the topping ingredients together and sprinkle on top of the bread mixture.
3. Bake at 350°F for 50-55 minutes (or until toothpick comes out clean). Cool completely.
 She used peanut butter instead of the honey almond butter because she had more of it.  Next time, she'll use the honey almond butter.    She didn't use the topping.   She said that we didn't need the extra sugar.      Those are apple chunks that you see.

We smelled the peanut butter while it was baking but we don't taste much of it in the baked bread.  What we do taste is a hint of banana and apple  and it's spicy like gingerbread.    It's delicious and mom will make it again. 
 And now for the official taste testing~~
Yup, it passes with flying colors!

As you can see, my bath on Saturday led to groomies on Sunday.     I am ready for Santa!

  2. OHHHHHHHHHHHHHHHHHHHHHHHHHHHH my cats and AIREGal pals this is most definitely a keeper here at Manor Madi and mom is kinda jelly that I'm sitting by that lovely slice. As you can see she didn't put her mug on the card...the pic above mom is Mom's Christmas scar around her neck.

  15. Sounds delish mainly we just make banana bread. Today Lee says we are making Key Lime Snowball cookies anything Key Lime Lee loves. Your apartment looks so festive with every corner decorated. We have went very rustic this year and just went with everything old ~ old sleigh bells, old sleigh, old Cedar Hill box filled with greens and wood and poinsettia and lights. It is our rustic theme Christmas.
