In the Purrsuit of Flavours

We are joining Phenny and Nellie again this month for In the Purrsuit of Flavors.   This month it's all about bread.
Mom was hungry for corn muffins and last Tuesday, she wanted to buy cornmeal at the grocery store but the hoarders had other ideas and she ended up with this cornbread mix that she's never used before.
The recipe for cornbread and corn muffins is on the back of the package but mom didn't follow it explicitly.   She melted 1/4 cup of butter in the saucepan, then added 1 1/4 cups of water, 1 egg and then 2 1/2 cups of the cornbread mix.     Mom always put sour cream in her batter so it doesn't taste so dry and holds together a wee bit more so she added about 1/4 cup of sour cream and stirred it all together. 
 Of course, I needed to TasteTest the mixture.
 The muffin pans have been greased with shortening and because mom likes larger corn muffins, this recipe will make 6 large corn muffins instead of 12 smaller ones. 
 Bake in a 400  degree oven for approx 20 minutes for the larger sized muffins.   They smell sooooooo Heavenly!
 Mom and I shared a muffin piping hot out of the oven~
 My half cooled longer than mom's did and now it's my turn~
 Excellent job, mom!  Bob's Redmill Cornbread mix has our vote!
We can't wait to see what you boys come up with for us to make in June!

  1. oh that looks super!!! we have that hoarders here too, so they have to place a sales person next to the precious things... I wonder who the garage sales in fall will look... tp, flour, yeast and noodles LOL

  3. Monty's favorite food was cornmeal muffins. Mom used to make them almost every week for him and she used a mix most of the time. He loved them and recently she made some for us. Yum...

  8. I bet those were extra delicious! Too bad about the stores being out of cornmeal. My GW noticed rice disappeared quickly too. Good thing she already got a big bag from the India market.

  11. they look great. Made cornbread last week. We only have polenta here instead of cornmeal. It's a bit 'grainy' but the taste was good. Haven't tried sour cream. Anyway, the dogs and I enjoyed it!

  17. Those look SO yummy, we love cornbread!! Mom has used that brand before and thinks they have good quality products. I added that mix to her grocery list (when she ever goes grocery shopping again!) so we can try them too!
