This month, Phenny and Nelly are making sensational sandwiches and we are joining in~
One of mom's most favorite salads to make is egg salad with avocado.
We chopped up the entire avocado, added chopped celery and added one hard boiled egg. Season with salt and pepper and a wee bit of the pesto that you find at the grocery store in a jar and stir in mayo until creamy.
Toast one bun in the toaster and top with the salad. yummmmm
Mom is funny about avocados. She's read on the intermutts that they could be good or bad for me and she doesn't take any chances so my treats are celery sticks and a hard boiled egg and that's good enough for me!

Looks SO good but your mom is right not to give you a bite or two.
ReplyDeleteOur egg sandwiches over here are only ever the hard boiled eggs and mayo and they are very smelly when you unwrap them but oh so lovely. We will have to try your version as it does look so good. One of our favourites is tuna mayo and cucumber at this time of year. Hugs & Love Susie & Treacle xx

ReplyDeleteAngel Madi loved boiled eggs too. Which always amazed me. No matter where she was in the house she knew the sound me cracking egg shells to slice. She came running.

Our Mom likes egg and olive sandwiches. Dad laughs because it's the only time she likes olives. We don't get avocado either.

ReplyDeleteOh a meatless sandwich. When it's hot I want less and less meat. I'm going to make this. I love egg salad, but never have put the avocado in before.

Egg salad with avocado sounds very yummy (for our pawrents). We do like hard boiled eggs around here, too.

ReplyDeleteThat sounds like a very tasty sandwich if only Mom could learn to like avocado. We don't know if it is OK for dogs or not, but we will take eggs any day. Dylan the silly bird here loves hard boiled egg too.

ReplyDeleteOur mom is a picky eater and she won't do avocados. We all just started getting celery with our dinners and we actually like it too. Enjoy!

I didn't used to be a fan of avocadoes, but I have been eating a little bit if it's homemade dip. I might like to try this for a change from our regular egg salad!
