Mom was on FB last week and saw a couple of peeps posting about gingerbread and it sounded so yummy to her that she wondered if she could it in muffin form. You can find just about anything on the intermutts, right?!
Gingerbread Muffins~~

Preheat oven to 375°F. Grease muffin tin or use paper liners.

Make Muffins: In a bowl, whisk together flour, ginger, cinnamon, baking soda, and salt. In a separate large bowl, whisk together melted butter, brown sugar, molasses, vegetable oil, egg, and hot water until smooth. Add liquid mixture to dry mixture and whisk until no dry pockets of flour remain. Divide batter among 10 of the lined muffin cups, filling each about two-thirds full. Bake until the center of the muffins springs back to the touch and a toothpick inserted comes out clean, about 15 minutes.
Our muffin pan is the large size and the recipe made 5 large muffins. We did add a few more tablespoons of hot water than the recipe called for and we did need to bake them for 20-25 minutes.

OOOooOOOoooo Those muffins sound delicious! Mom wants to try some! And Our Mom has star lights in the living room window ALL YEAR ROUND! She says we needed some "ambient" but not intrusive lights at night - I think she put them up just because they are cool looking - just like yours! And Molly, we LOVE your smile!
