Mom had yogurt that she needed to use so she searched for a recipe for yogurt muffins and she found a winner!
- 2 cups (275g) good quality flour
- 2 tsp. baking powder
- 1/2 tsp baking soda
- pinch of salt
- 1/2 cup (100g) sugar
- 2 eggs
- 1/2 cup (100ml) light olive oil - *we used vegetable oil*
- 1 cup (250ml) unsweetened yogurt (if using Greek yogurt, add 1 tbsp milk or buttermilk)
- about 1 1/2 cups of your choice of mixed fruit (should weigh about 320g) I used plums, chopped peaches and blueberries
- Demerara or Swedish pearl sugar to top, if desired
Instructions
- Preheat the oven to 350ºF.
- Sift flour, baking powder, baking soda and salt into a large bowl.
- Stir in the sugar.
- In a separate bowl or measuring jug, whisk together: eggs, oil, and yogurt, until smooth.
- Pour the yogurt mixture into the dry ingredients.
- Slowly stir the yogurt mixture into the dry ingredients in the large bowl, until just combined. DO NOT OVER STIR, it will make the muffins too dense.
- Gently stir in the mixed fruit, with just a few turns, then fill the muffin cups or greased and floured loaf tin. Sprinkle with a little Swedish sugar or raw sugar (demerara) if desired, for a crunchy top.
- Bake for about 15-18 minutes or until golden brown.
- *******Mom didn't use plums, peaches and blueberries because she didn't have them but she did use frozen cranberries and dates and she also added 1/2 teaspoon of orange peel, a pinch of nutmeg and cinnamon.
- I've had yogurt lots of times before and I do love it!Just out of the oven~~
My turn to TasteTest~The muffins are moist and yummy and this recipe is a keeper for sure. - Happy Tuesday, everybuddy and what an irritating post with all of these stoopid numbers!!
Love ya lots♥

I bet they are delicious. Mom loves fruit, but she doesn't eat muffins anymore, she doesn't eat much of anything. If she was still eating those things she would love these muffins. Maybe she will bake them for the others at Christmas.
ReplyDeleteThey look and SMELL so good!
ReplyDeleteWillow says she would SO be drooling!

Ooooh yes, they sound totally yummy. I'll tell Gail to get baking - I know we always have unsweetened yoghurt in the fridge.

ReplyDeleteThis is very close the yoghurt cake/bun recipe I have been using for 40+ years... it is so reliable and you can vary the fruits, or no fruits, or wholemeal flour, or even... get this... go sugarless and add grated cheese!!! Enjoy. Hugs and wags, YAM-aunty xxx
Those muffins look delish! They rose so nicely too.
ReplyDeleteThey sound like good muffins. The fruit your Mum put in makes them like Christmas muffins.
ReplyDeleteOh those look so very delicious. Your mom is most talented.

ReplyDeleteLulu: "Our Dada says he would totally eat those muffins for breakfast. Apparently he considers any form of pastry to be an appropriate breakfast food, including doughnuts and pie!"
