In front of our house, the Rhododendrons are making a beautiful display!
We have rhubarb growing in our backyard - not a lot but enough that mom decided to make a rhubarb crisp.
Ingredients: 3 cups diced fresh rhubarb, 1/2 cup white sugar, 1 TBSP all purpose flour, 1 TBSP water, l tsp ground cinnamon, and 1 tsp ground allspice (optional and we had it so we used it)
Topping: 1 cup oats, 1 cup brown sugar, 1/2 cup flour, 1/2 cup butter.
Directions: Preheat oven to 350 degrees F. Grease an 8-inch square baking dish.
Mix together rhubarb, sugar, flour, water, cinnamon and allspice in a large bowl until combined. Set aside.
Make topping: Mix together oats, brown sugar and flour in large bowl and use a paster cutter to incorporate butter into oat mixture until crumbly. We didn't find that the pastry cutter was helpful so mom used her hands.
Press about half of the oat toppping into the bottom of the prepared baking dish. Top with rhubarb mixture and then cover with remaining topping. Bake for about 45 minutes.
Ready for the oven~~

The Azaleas are coming into bloom!
Mom added this catnip to our garden recently and it's coming into bloom too.Mom was checking out FB one morning and one of her friends posted a recipe for Sweet Potato Cornbread and you know how much we love muffins so we changed it up to be a muffin recipe.
Ingredients: One cup of all purpose flour, one cup of yellow cornmeal, one tablespoon of baking powder, 1/2 teaspoon of salt, 1/4 teaspoon of baking soda, one half cup of cooked and mashed sweet potato, one quarter cup granulated sugar, one quarter cup of melted butter, one beaten large egg and one cup of milk.
Instructions: Preheat oven to 400 degrees F and grease your muffin cups. In a large bowl, whisk together the flour, cornmeal, baking powder, salt and baking soda. In a separate mixing bowl, mix together the mashed sweet potato, sugar, melted butter and the beaten egg until well combined. Add the sweet potato mixture to the dry ingredients and mix well. Slowly pour in the milk, stirring constantly, until a thick batter forms. Spoon the batter into the prepared muffin cups. Bake in preheated oven for approximately 30 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
I did make sure the sweet potato was sweet enough~
I did taste the batter before it hit the muffin pans.My mom had lunch with my sissy yesterday - just salads, but it was fun and she did bring home leftovers.

We love the vibrant color of these perennial Bachelor Buttons!On Friday, mom spent time outside cutting the grass and raking and weeding. When she came back inside and looked out the picture window, she noticed that Mrs Robin's nest was tilted at a funny angle. She headed back outside with the camera. She was not surprised to see the damaged eggs.
The morning of the Coronation of King Charles, she looked outside and saw Mrs Robin sitting at the edge of her destroyed nest and she cried for Mrs Robin's hurt. She's still coming back and it makes us feel so sad.Today is the coronation of King Charles - a once in a lifetime and not to be missed event. As you are reading this post, I will be jetting to Westminster Abbey and I'll arrive just in time for all of the fun festivities!

Do you see all of those white flowers behind me? They are growing EVERYWHERE!
Mom looked them up and they are called Garlic Mustard but she doesn't think they smell like garlic or like mustard. Thankfully, they pull out very easily for a "weed".What a lousy weekend we had. The rain just wouldn't stop but mom and I got stuffs accomplished. I got a bath, which I truly don't mind at all, and mom groomed me.
I love my shorter furs and just in time for warmer temps when they arrive.
