Mom bought apple cider at the grocery store this week and wanted to make a batch of Apple Cider Muffins~~
Ingredients
- 2 cups all-purpose flour
- ½ cup brown sugar
- ¼ cup granulated sugar
- 2 tsp baking powder
- 1 tsp salt
- 1 ½ tsp cinnamon
- 2 eggs beaten
- 2 Tbs vegetable oil
- ½ cup apple cider or juice
- ¼ cup milk
- Topping:
- ¼ cup butter melted
- ¼ cup brown sugar
- ¼ cup granulated sugar
- 1 Tbs cinnamon
Instructions
- Preheat oven to 350.
- Spray a 12 count muffin tin with non-stick cooking spray
- In a mixing bowl, whisk together your flour, brown sugar, sugar, baking powder, salt, and cinnamon and mix until combined.
- Add in your eggs, oil, apple cider and milk and stir until just moistened.
- Fill your tins about 3/4 full with batter and bake for about 15-20 minutes or until a toothpick inserted in center comes out clean.
- Let cool for a little bit.
- Meanwhile in bowl melt butter, in another bowl whist together your sugars and cinnamon.
- Dip the tops of the muffins in butter then in your cinnamon sugar mixture.
Batter in the greased muffin tins and ready for the oven. We always use the larger muffin pan and they take approx 30 minutes to bake.
Muffin are just out of the oven.
Mom is not a huge fan of sweet toppings so she left that off. The muffins would have probably been prettier with the topping.

We both loved them! Mom is considering next time maybe adding a peeled and diced apple or maybe a few chopped walnuts?
