Saturday before Easter Sunday

 First off, we have to tell you that on Thursday evening, the UPS man rang our doorbell to let us know that he had made a delivery.  I was pleasantly sleeping away and didn't even hear the doorbell.   The UPS man delivered a package from our longtime blogging friends, Miss Phyll and her Cattledog, Willow.   They sent me an Easter basket!!!!!  How generous and thoughtful is that!

Inside the brightly colored bag are handmade treats from Kerri's Pawsome Bakery, where Miss Phyll and Willow visit all the time!  Miss Kerri calls my Easter basket - the Hazel box.   
These treats smell so yummy!    Miss Phyll told mom to try one as these treats are made with hooman grade ingredients.   
Yes, please!!!!!
Thank you so very much, Miss Phyll and Willow♥    You have made one little AireGirl very happy and I have more treats for a DAYS to come!
Let's get Nonna's Rice pie going, mom!

If you don't like to make pie crust and you like a simple and easy pie to make that works for Easter or any summer day, this is the pie for you.

Mix together:
1 pound ricotta
3/4 cup sugar
4 eggs
Approx 1 cup of whole milk (mom uses a little on the lesser side of a cup)
1 cup cooked and cooled rice
1 teaspoon vanilla, a dash of rum extract and a few shakes of cinnamon.

Stir it all together in a bowl with a spoon.   EasyPeasy, right!   Pour mixture into a greased 8" X 8" pan or pie plate.

Bake in a 350 degree oven for 50 minutes to one hour depending on your oven.  It could go a wee bit longer and mom always puts a knife in the center to be sure it's done.

The original plan was that mom and I were invited to my sissy's house for Easter but because of all of my recent issues,  Missy and mom decided to have Easter at our house and we will be celebrating today!

  2. We are so happy you are enjoying the Easter Basket from Kerri - and HER Willow - she recently added a puppy - 70% Pyr - in fact, our Saturday 'venture will include a visit to Kerri's to pickup my April Hazel Box - AND Willow Baskets for Khousin Emmy and ME!

    Kerri was excited when she saw some of her treats would be going to CT - or as we call it ConnectTheDots!

    The rice pie looks and sounds so good - ricotta will be going on this week's store list!

  10. Nonna's Rice Pie sounds yummy to us. Hope everyone enjoyed it and had a wonderful Easter together. That was one very special Easter basket you received from Miss Phyll and Willow. They are both very kind and giving friends.
