Tasty Tuesday

 Mom saw a recipe for Healthy Date Carrot Muffins on FB that she really wanted to try~

Ingredients
  

  • 1 cup of oats (I use steel cut quick oats)
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 cup roughly chopped dates
  • 1 cup finely shredded carrot 3 small-medium carrots
  • 1 large egg beaten
  • 1/4 cup vegetable oil
  • 1 cup milk
  • 2 tsp vanilla extract

Instructions
 

  • In a large mixing bowl, combine dry ingredients.
  • Add in dates and toss until they are well coated. Break up any date clumps.
  • Repeat with the shredded carrot—add, toss to coat, no clumps!
  • In a small mixing bowl beat egg with oil, milk and vanilla.
  • Pour into flour mixture and stir to combine well.
  • Spoon into greased muffins tins
  • Bake at 350 degrees for 30 minutes. 
    She had some fruitcake mix that she wanted to use so that was included in the half cup of dates mixture.  I got the left-over shredded carrots!
    Just out of the oven~
    The cinnamon gives the muffins a zing.   The muffins are not too sweet but very moist and yummy!   A keeper recipe, mom!

  1. It looks like the muffins were a hit with you! Mom uses dates a lot when she is making her foods because they naturally sweeten things.

  14. They do look lovely although I am not a fan of carrot cake which people make a lot here in the UK! To me carrots are veg and not to be baked into a cake!!!! I haven't made muffins for ages and I think when I have done the Christmas baking I think I will make some. They always go quickly in our home as DH and The Boys love them!
