One of mom's favorite "treat" that only comes once a year is rhubarb so she made Rhubarb Crisp~
Ingredients: 3 cups diced fresh rhubarb, 1/2 cup white sugar, 1 TBSP all-purpose flour, 1 TBSP water, 1 tsp ground cinnamon, 1 tsp ground allspice.
Topping: 1 cup rolled oats, 1 cup brown sugar, 1/2 cup all-purpose flour, 1/2 cup butter, softened.
Directions: Preheat oven to 350 degrees. Grease an 8" square baking dish. Mix together rhubarb, sugar, water, cinnamon and allspice in a large bowl until combined. Set aside.
Make topping: Mix together the oats, brown sugar and flour in another bowl. Incorporated the butter until crumbly. Mom used her hands and yes, it's messy.
Press about 1/2 on the oat topping into the bottom of the prepared baking dish. Top with rhubarb mixture and cover with remaining topping.
Bake for approx 45 minutes.
It is sooooo rich and delicious!The last time mom made this recipe was three years ago. I don't think we should wait that long again, mom! This is really yummy!I gave mom the garden flag hanging on the frig to mom for her special day but somehow, it never made it out to the garden☺

Great recipe, but can I use something else instead of rhubarb, apples or pears? I don't have rhubarb in my garden. I need to get some and plant them somewhere so I can try this delicious recipe. Best regards, Jasna

Mom loves rhubarb but it is hard to find around here these days. Her Mom used to get a lot of it from a friend years ago when Mom was a little girl and it was always something everyone loved. Enjoy.
