Baking Anginettes with Mom

One day this week, mom was talking with our mail lady named Carolyn.  They were chatting about how much they both love anginette cookies at Christmas time.  The one point that came up that both girls agreed on was how dry they always are and how you need to drink a whole glass of milk to wash down one cookie!  Carolyn told mom that she has an anginette recipe that is moist and to-die-for and she shared it with mom!So that's what we're making ~

This is Carolyn's recipe.  Mom cut it in half and we still got 4 dozen cookies!

2 sticks butter
1 1/2 cups sugar
2 teaspoons lemon extract or anise extract if you prefer --  we used the lemon.
1 Tablespoon baking powder
1 teaspoon baking soda
1 pound ricotta
4 cups flour
3 eggs
1 teaspoon salt (optional)

Preheat oven to 400 degrees.  Cream butter, sugar and eggs.  Add the other ingredients and mix well.
Bake for 8 minutes.

Frosting:
1 cup confectioners sugar
1-2 Tablespoons of milk
1/2 teaspoon vanilla
 This is before the cookies are popped into the oven to bake. 
 The helper ALWAYS gets to lick the beaters!   Too bad Mitch is working with the boys today! haha
 The cookies bake at 400 degrees for 8 minutes.   Mom has always cooled her cookies on newspaper. She learned this from her mom.  Does anyone else cool cookies on newspaper?
 They get a dab of glaze next.

I love my brother!  I know I tease him and bash him a lot but life wouldn't be any fun without Mitch!  Did you get all of this down, Santa *wink wink*

Mom is going to be making her pineapple cheesecake for Christmas and she's putting cherries on top!

  2. those sound like yummy cookies - I think we will get our Mom to try making them. As for newspaper....it is actually dangerous to use now as about ten years ago they went to water soluble inks which is why it gets all over your fingers when you read the paper....wouldn't want ink on our cookies and it can be toxic. Back in merry old England they use to wrap fish and chips in newspaper but they had to ban the practice because of the inks.

    Nice baking. Those look really good and even better on the beaters. My grannie uses newspaper for cookie cooling too. Hey... I included your nice comment about mitch in my letter to santa...

  18. We've never heard of those cookies either..... and mum reckons that there are too many toxins and chemicals in newspaper inks to put foodables on them. Buy your mom some cooking cooling racks from the home shops.

    I love the smells of Christmas cookie and cake baking!!

  22. I don't think my Mom ever baked cookies in her life!!!!
    I did a few times when my boy were young. I made a lot more cup cakes then cookies tho!!

  27. I've never heard of these cookies, but they sure look worth trying. I've never cooled cookies on newspaper, but my mother-in-law, may she rest in peace, used to roll out her noodles on the local newspaper. I've tried to replicate her noodle recipe every year since her death, but can't quite seem to get them just right. My nephew says the missing ingredient is newsprint from the Greenup Press. I think he might be right.
