In Purrsuit of Flavors Wednesday

 We are joining Phenny and Nelly for In Purrsuit of Flavours.   This month they have decided on colorful food or drink for the festive season.

We decided on Rainbow Muffins, which are more like cupcakes than muffins.

Ingredients (12 regular sized muffins):
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 stick unsalted butter, softened
1 cup granulated sugar
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
a few drops of each food coloring paste (depends on how many colors you prefer)

Directions:
Preheat oven to 375F. Grease muffin tin or line with muffin liners.
In a large bowl, sift flour, baking powder, baking soda and salt. Mix well.
In the bowl of an electric mixer fitted with the paddle attachment, cream butter on medium-high speed, until light and fluffy. Gradually add sugar and continue to beat until well combined and fluffy. Reduce the mixer speed to medium and slowly add eggs until just blended.
With the mixer on low, slowly add half the flour mixture; mix until just blended. Add the milk and vanilla extract, mix until just blended. Slowly add remaining flour mixture, scraping down sides of the bowl with a spatula, as necessary, until just blended.
Divide batter evenly into several small bowls, depending on how many colours you want.
Add food colouring paste to each bowl and mix thoroughly.
Working with one colour batter at a time, evenly distribute among prepared muffin liners. Layer with remaining colour batters.
Bake for 20 to 25 minutes. Transfer muffin tin to a wire rack and let cupcakes cool completely.

Of course, my job is always to taste test!    It's good mom.  Not too sweet but sweet enough.
We divided our batter and colored it and most unfortunately, our red bottle was almost empty and the liquid inside was all dried up *sob sob*       Why didn't we check on this a week ago?  grrrrrrrrrrr   So we have no red to use and mom was a dummy not to mix up two containers of yellow instead of so much green. 
Our batter is all layered up in the greased muffin tins and ready for the oven.
Twenty-five minutes later~
So they don't look as pretty as they would have with red but oh well. 
It looks and smells pretty good to me, mom.  

The muffins are yummy and moist but they're actually more like a not-so-sweet cupcake without the frosting.  

We're off to see what everyone else has come up with for their colorful foodables or drinkies!

    Your muffins look wonderful we love the colours so glad you got some. Treacle has shared in Youngest's Birthday cake and loved it.

  16. Those look very super yummy! My ghostwriter has cheated on the Christmas baking this year. She went to Aldi's and bought tons of German cookies and gingerbread treats to share with the family, and her coworkers.
