Yesterday was rainy and dreary and raw and mom was in the mood for Rice Pudding~
She says that making this recipe reminds her of her younger days when you had to stir and stir and stir until you thought your arm would fall off ☺
The recipe:
1 1/2 c. water |
3/4 c. uncooked medium white rice |
2 c. milk, divided |
1/2 c. sugar |
1/4 tsp. salt |
1 egg, beaten |
1 Tbsp. butter |
1 tsp. vanilla extract |
Directions:
1. In a medium saucepan over high heat, bring water to a boil. Stir in rice, reduce heat to low, and simmer, covered, 15 to 20 minutes, or until water is absorbed.
2. In a large saucepan over medium heat, combine 1-1/2 cups milk, the sugar, salt, and the cooked rice; mix well. Cook 10 to 15 minutes or until thickened, stirring constantly. Stir in remaining 1/2 cup milk and egg; cook 2 minutes more, stirring constantly.
3. Remove from heat and stir in butter and vanilla. Place in serving bowl and refrigerate until chilled.
Of course, the official taste tester is on duty! Mom served it to me with a heart cookie after she removed the raisins that she decided to add. When she eats it, she'll will sprinkle a wee bit of cinnamon on top.

My brother Steve - the one that has lived in China for almost 20 years now always LOVED rice pudding - and I know there is a recipe in the box of family treasures - I recall making it for him every now and then -
