I helped mom make Pumpkin Morning Glory Muffins!
Ingredients:
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup vegetable oil
1 cup canned pumpkin puree
2 large eggs
1 tsp vanilla extract
1/2 cup shredded coconut
1/2 cup chopped walnuts
1/2 cup dried cranberries or raisins
Instructions:
Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
In a large bowl, mix together granulated sugar, brown sugar, and oil until combined. Add the pumpkin puree, eggs, and vanilla extract and mix until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the coconut, walnuts, and dried cranberries.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Pumpkin is good stuffs!

Mom bought pumpkin for Madison which she won't eat, so we have been getting some in our food. Good stuff. Enjoy the muffins.
