A Recipe on a Wednesday

 As requested, this is the recipe that mom used for her Cream of Spinach soup~

Cream of Spinach Soup

Ingredients:
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
Large bag of chopped frozen spinach - you can use fresh spinach also
2 medium potatoes, peeled and diced
3 carrots, peeled and diced
4 cups chicken broth
1 cup heavy cream
Salt and pepper to taste

Directions:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes, or until the onion is translucent.
Stir in the minced garlic and cook for an additional minute, until fragrant.
Add the diced potatoes and diced carrots to the pot and cook for 3-4 minutes.
Add the chicken broth.
Bring to a boil, then reduce the heat and let simmer for about 15 minutes, or until the potatoes and carrots are tender.
Once the potatoes and carrots are cooked, add the cream.
Add the chopped spinach to the pot.
Sprinkle with Parmesan cheese if desired.

  4. Thanks, Dude. #1 says she will make it when the weather starts cooling down, but without the onioin and garlic as she eats neither.

  11. I just had spinach soup and our chef substituted the chicken broth for broccoli soup. It was good but didn't taste like spinach. I like spinach.
