Nature Friday
We are joining Rosy this week for Nature Friday~~
We found big mushrooms at the end of our driveway~
Mom spotted this guy one day while she was weeding. She got all excited because we don't see many box turtles. We do see lots of painter turtles with Landlord Bob's pond being so close. This is an Eastern Box turtle!We found sumac coming into bloom along our walk~
We found this pretty lily at Miss Laura's house.
Our magnolia tree is blooming again but it's never as pretty as the first time in the spring when the tree is full of flowers without the green leathery leaves.
Mom discovered this moth on the coneflower~

Our New Window
Landlord Bob ordered a new picture window for us about 6 weeks ago. It took awhile but it finally arrived and we had to wait for it to be installed. Mr Eddie and Mr Rich and Landlord Bob were here to get the job done yesterday. I wanted to be more involved but mom said that I was being too friendly and disruptive and she leashed me so I wouldn't step on any sharp tools.
The guys were outside working away and I finally got to look out the huge opening.Pass it in, Eddie. I'm right here and waiting!
I really am the bestest supervisor!
This is the old window that was totally rotted and beyond repair and none of the windows ever opened.
This is the new window that mom needs to wash and put the curtains back up and put stuffs back in place after Landlord Bob has filled nail holes and painted.

We didn't go far on our walk. It was hot and humid and there were way too many irritating bugs, even though mom and I both had our bug spray on plus mom didn't want to over-do it for me.

I love licking my paws because it feels good and I might be slightly bored. I'm sorry that I go so overboard that I limp and we can't go for walkies and that I never learn my lesson.

Nature Friday
Trees are nature, right? Yesterday, mom watched my sissy's boyfriend take down a tree for Landlord Bob. His company name is Tree Climbing Specialist and he sure was!
He has so many heavy tools that he uses strapped to his body as he climbs higher and higher.It's amazing to watch how precise he swings and lands each and every branch!
His helper, Matt, was dragging the branches, along with his other duties, to Landlord Bob's waiting tractor.
Landlord Bob was working too and dragging all of the branches to his woods. He made multiple trips.
Tommy was constantly planning his next move.
Would you do this for a living? Not me - but he was fearless and so good at his craft!

Finally - after two hours, Tommy is down safely on the ground.
As mom was returning home, she couldn't help but take pictures of Landlord Bob's, beautiful Rose of Sharon flowers.
He has double Rose of Sharon blossoms!
And so you don't forget what I look like☺

Tasty Tuesday
Mom found eggplant in the grocery store this week and decided to make her friend, Miss Candy's Eggplant Rollatini.
Peel and slice eggplant lengthwise 1/8" - 1/4" thick. Salt slices on both sides to "sweat" for 10 minutes. Pat dry with paper towel. Lay eggplant slices on lightly greased cookie sheet. Bake in a 400 degree oven for about 10 minutes till the slices are soft enough to roll.
While the eggplant slices are sweating and roasting in the oven, mix ricotta with salt and pepper, an egg, parmesan cheese and parsley. Mom used a pound of ricotta and it was too much for these amount of slices. Mom shared one of the roasted slices with me once it cooled and I liked it☺Place a healthy spoonful of the ricotta mixture at the fat end of the roasted eggplant and roll. Place the seam down in an 8" X 8" pan that has a thin layer of tomato sauce on the bottom. Mom's favorite tomato sauce is Rao's marinara. Cover the eggplant rolls with more sauce and sprinkle with parmesan cheese.
Bake in a 350 degree oven for approximately 30 minutes. Mom spooned the remainder of the ricotta mixture that she had made too much of in the pan before baking it.
It's looking and smelling mighty tasty, mom!
What? Do I have a spot of sauce on my nose!☺
This is mom's favorite recipe for eggplant. The eggplant is never mushy and you actually need a knife to cut into it!

Before we left our yard, we noticed that Miss Molly the butterfly bush is in bloom!
Along our walk, the wild white yarrow is blooming~In our garden, the betony is flowering~
The coneflowers are blooming away~

He is Topo Gigio who appeared on the Ed Sullivan show ages ago. Mom fell instantly in love with him and she still loves the little guy today.

Tasty Tuesday
Mom's special birthday Blonde Brownies came out of a book that she got as a Christmas gift from her mom and dad in 1963. The pages are well used so you can tell that she's made this recipe more than once but she hasn't made it in a long time.
It's a simple recipe that you mix by hand. Official TasteTester at your service!
We found the best way to spread the batter in the greased pan and flatten it was with your fingertips.
Twenty-three minutes later - it's out of the oven and cooling.
I was waiting so patiently and I did get the NO MOLLY - WAIT! Mom was afraid that I was going to eat the candle. Thank goodness it wasn't lit!
All gone in one big bite!
