Tasty Tuesday

 Mom has wanted to make Apple Crisp for a bit now and she had the perfect excuse.   Landlady Linda came to visit.  She was mom and Molly's landlady when they live in the apartment with the fenced in yard.

Stop teasing me, mom.  These apples are fake!

The recipe:

  • 6 golden delicious apples, peeled and chopped (other varieties can be used, can also be sliced)  
  • 2 Tbsp granulated sugar
  • 1 3/4 tsp ground cinnamon, divided
  • 1 1/2 tsp lemon juice
  • 1 cup light brown sugar
  • 3/4 cup old fashioned oats
  • 3/4 cup all-purpose flour
  • 1/2 cup cold unsalted butter, diced into small cubes
  • pinch of kosher salt

Instructions

  • Preheat oven to 350 F degrees.  Butter an 8×8 baking dish, or spray with non-stick cooking spray.  Set aside.
  • In a mixing bowl, add chopped apples, granulated sugar, 3/4 tsp of the cinnamon and lemon juice.  Stir to combine, then transfer to prepared baking dish.
  • In a separate mixing bowl, add topping ingredients (brown sugar, oats, flour, 1 tsp cinnamon, salt, and diced cold butter).  Use a pastry cutter to cut the butter into the oat mixture, using a slight downward twisting motion, until mixture resembled pea-sized crumbs.  Alternatively, you can use two forks or even your hands to cut butter into the mixture.
  • Spread topping over apples in baking dish, and gently pat to even it out.  Bake 40-50 minutes, until golden brown and bubbly.
  • Serve warm and enjoy!

  • We had a great visit and I got to meet the lady that Molly knew so many years ago and she wanted so much to touch me but nope, I wouldn't let her.   I kept scampering away when she got too close.

  1. That sounds like a fun little meet up. Too bad you are afraid of people. Three of us love people and want to meet and be petted by everyone. Olivia is only interested in hanging out with Mom and is polite but doesn't care about meeting anyone. The apple crisp looks tasty, it is that time of year.

  2. I hope with a little more time you'll get comfy with people, Master Duke ... June is 4 1/2 years old and sadly it has never happened (partly due to 2 yrs of pandemic life), just know that if your Mom gives them an "OK" then they really are "OK" ...

  8. It's definitely that time of year! #1 loves to make apple crumble but she does not use oats or cinnamon, just flour, sugar and butter!
