Mom found a great recipe that sounded quick and easy and zucchini is in season so she made it!
It's Zucchini Soup with Cheese and Eggs and it's Mary Ann Esposito's (Ciao Italia) recipe. This is the link if you want to watch her make it.
Our zucchini never browned and hers didn't either if you watch her video.

Mom doesn't remember her Nonna ever making this soup but it sure is tasty!
I need a refill, mom! This soup is delicious!
If you want to make it - hurry as fresh zucchini won't be available for a whole lot longer.
